Pumpkin is the soul of any celebratory meal that is laid out in a UP home , especially vegetarians. Normally served with pooris , this exquisite golden squash is a must for all celebrations be it a wedding or a small birthday or any other get- together . Every UP bhaiyya’s ( as we fondly call them) home I have visited have served me kachoris or pooris with kaddu ki sabzi or aloo koda( pumpkin with potatoes) . K says Pumpkin is as synonymous to UP homes as eggplant is to Andhra Pradesh.

Those small ruby bulbs lying amidst their greens are a treat to watch at the farmer’s market. I often make a curry , sambhar or kootu with the bulbs and the greens go into the smoothie or I just saute them . But last week I came home with a bountiful basket of these little ruby reds , juicy , sweet cherry tomatoes and fresh corn . I was thinking a simple salad.

Life is hectic these days. If I catch eight hours of sleep , then its a great day. My day is scheduled with small breaks . I have to be constantly on the go to complete the tasks and daily chores , Face book is also a part of it
. Yesterday was one of those days that K generously offered to make dinner . I am a “sit and eat at the table” kinda gal and its been a little more than 3 months since I sat at the table without being interrupted while eating. So with my little one tucked into bed earlier than usual, we finally had some time to ourselves , cook and eat without interruptions.

Corn Bread is a regular and a big hit in my house. Often served with soup or a chunky tomato dip , it is a quick dish to make , especially on days when I have to work with a limited stuff available in the pantry. I love the golden bread specked with reds and greens sparkling on my plate. To my eye it seems like an exquisite piece of art . I make these in the form of mini cakes . K calls them Sunshine cakes ! This recipe was given to me by an ex colleague G , who would bake it for us on a large cast iron skillet every other week.
