Does this happen to you ? I always set out to do ” A particular ” dish and end up doing something else. It happens about 80 % of the time . Today was one of those days that I set about making a Horiatiki, but ended up with something else . Sweet Peppers , Salty feta , Juicy cherry tomatoes , crunchy cucumbers were quite a colorful and a tasty treat !
Ingredients:
Serves 2
10-12 sweet peppers
1/4 cup of bite sized feta cheese
12-15 Pitted kalamatta Olives
2 persian cucumbers
A handful of cherry tomatoes
For the dressing
4 tablespoons of olive oil
4 tablespoons of lime juice
1 teaspoon of red chili flakes
1 teaspoon each of oregano and parsley.
salt to taste
Method:
Take together all the dressing ingredients in a cup and beat until mixed well.
Marinate the feta , peppers in half of the dressing for atleast 30 minutes. Add the remaining veggies and salt to the marinated peppers and feta , pour the remaining dressing , toss gently and serve on a bed of lettucen and enjoy !I used romaine lettuce leaves for the same.

Congrats Dee! That’s one eye catching salad. I have never tasted feta cheese so far. For some weird reason it feels like it’s a non-vegetarian thing. Quirky me (or us, Siva too feels the same)
