Clean Up the Kitchen Soup

We are in the process of cleaning up our pantry and crisper. Whoa , what a disorganized shopper I am ! I found a bag of Peas both yellow and Pigeon peas, some Ras el hanout  a potato, a carrot , a stalk of celery and what not … We normally dont spend a lot of time for dinner , we’d rather spend that time eating or relaxing . I prefer one pot meals . This soup was not well thought. I randomly threw in everything into the pot and lo a spicy, steaming hot and unexpectedly tasty soup emerged. I had to post it !

Ingredients:

2 small potatoes

A handful of presoaked yellow peas or any legumes of your choice

A stalk of celery

A serrano chili , or a chili of your choice

1/2 cup of diced tomatoes

A carrot 6-7 cups of water

1/2 teaspoon of  Ras el hanout , if you dont have this spice mixture you can add some cinnamon and fennel seeds.

A garlic clove

A medium onion chopped

Method:

1. heat Olive oil in a pad and add the crushed garlic clove and the onions and saute until pink , then dump all the chopped veggies except tomatoes and 6 cups of water and let it simmer until the legumes are done. You can also precook the legumes before hand. Then add the tomatoes , salt , Ras el Hanout and cook until the tomatoes are tender.

2.Serve piping hot with some crusty bread. K decided its really hard to tear a ciabatta  , for every bite, so he just tore bite sized pieces and added them to his bowl ! It was hearty and a keeper on our list !

    This is the kind I am cooking now;-) with kids at home, i cannot do 2 full meals per day in this heat. love it. I have never used that spice mix before.

    ha huh! Now u r cooking more like me Dee! I do this so often that half the time my so called ‘fab creations’ are left out unphotographed(!!!) cos I get confident that its not making its way to my blog. But few mouthfuls later, I am like whoa - what was that - and Karthik’s ‘Oh this is good - took photos yet?” doesnt help at all :)

    I am liking the all but kitchen sink soup here :)

    The name of the soup is funny yet apt. Never used the Ras el hanout spice before. With potatoes, celery, legume it is a well balanced meal.

    Looks very hearty! You know what, I am cooking something similar too nowadays. but who said it was easy to do something like this, the chopping up takes all the time!
