I have some great news to share with all you folks !! We have been blessed with a little angel 3 weeks ago and apart from experiencing ” The joy of motherhood/parenthood” we are having sleepless nights and innumerable diapers to change !!! So far we are enjoying this phase though its a tad difficult( not impossible) to do so without help as both sets of parents could not make it in time.
Did I anticipate this will clash with this spicy event ? Yes… but it was too late to back off … rather I didnt want to , inspite of dear sunita , offering to take it off from my to do list. I just wanted to see how it goes… I was too zoned out to think of a recipe , it took me two weeks to think of one , I sliced the veggies yesterday and finished it off today for dinner.
Coming to the recipe , this is a simple one which my sister taught me while i was still single. Kalonji is a favorite spice in my home and often used in vegetables like potato and bell pepper curries. One of my favorite ways is to just add a pinch or two in a pepper stir fry and enjoy. This pickle is done in a jiffy especially when there is a sudden guest or two. Tastes best the next day and you can store in the refrigerator for at least a week.
Ingredients:
4 medium sized carrots
1 teaspoon of Nigella /kalonji seeds
1 teaspoon of cumin/jeera seeds
1 teaspoon of mustard seeds
1 teaspoon methi powder
1 teaspoon chilli powder
salt to taste
A few pinches of turmeric
1 tablespoon of oil.
Method :
1.Chop thin slices or grate the carrots
2. Add salt, methi powder , chilli powder and turmeric to the carrots and keep aside
3. Heat Oil in a pan and add the mustard seeds, kalonji, jeera and let the seeds splutter , remove from flame and pour on the sliced carrots and mix well. Keep aside atleast for 10 minutes before serving with rice or rotis.

Congratulations on your new addition to the family! I make carrot pickle exactly the same way, however I grate the carrots and use green chilies instead of chili powder.
