Avocado Rolls
Both of us cant resist buying an avocado every week, we love to use it in a koshimbir K makes which I will post soon. I started of using it in chapatis , then guacamole , then as a major ingredient in sandwiches and now these rolls. Quick and easy and always a pleasure to eat , they are common at the parties hosted by us for people who especially love fried food. I cant keep my hands off them and cant wait to finish them. So this was the last thing I made during my fried food phase and decided to end it once for all before I put on oodles of weight , because I wont stop eating just one.
For the filling :
1 Haas Avocado
1 tablespoon of red onion
1 green chilli chopped finely
A squirt of lemon juice
salt and a pinch of chilli powder
Method:
1. Remove the pith of the avocado and with the back of a fork , make it mushy , Mix all the above ingriedents , sprinkle lemon juice and keep aside.
For the rolls :
Take a spring roll wrapper and place the filling in the middle and use this procedure to wrap the roll.
2. Heat Oil in a wok on medium heat and fry the rolls for about 2-3 minutes on both sides. remove and serve hot!

Dee I thought I would have missed a couple of your posts! It’s like avocado samosa. For diet conscious people, I think baking is also a nice option. Earlier I have stuffed potato stuffing in the spring roll wrappers and have baked it, which was good.

I can just imagine the great play of textures here: the crunch of the fried wrappers and the smooth creaminess of the avocado with the sharp snap of the red onion. Love it.
