We love to buy books , for us there are no bad books , there was a time when one had to gingerly step into our room without stepping on stacks of books ( the book shelf wasn’t enough in our small 2 bedroom apartment in Bangalore) . I cried the day I had to leave my books some at my mom’s place and some at my parents-in-laws place. My husband’s making up to me is very simple , buy a book ! Of late with my hobby of blogging becoming a full time obsession and somewhat nightmarish to him , my interests lie in cookbooks . Having 2 library cards each( that makes four) , knowing a thrift book store owner who calls me when he finds the book I want , apart from having innumerable books on hand isn’t enough , I still crave for this or that book. So , on a lone trip to Costco and as a part of the never ending birthday list ( hoping that it will go on until the next year!) , my dear one got me a book. The book of course has fabulous pictures and surprisingly had a lot of Indian appetizers and dishes like the samosa, bonda , bhel puri and the ubiquitous Idlis ! I loved the simplicity of the pictures and the recipes, which most of them could be made in a jiffy!. So here is a Beetroot Hummus which i tweaked to our palate and going to dear siri who is hosting this month’s A.W.E.D – Middle Eastern Cuisine. We adored the pink color for a while , before we dipped the Pita chips into it!
Ingriedents
- 1 medium beetroot ( sliced and steamed)
2 shallots chopped finely
1 cup of chickpeas , soaked overnight and boiled until tender
4 garlic pods
1/4 cup tahini
1/8 cup lemon juice
1 teaspoon cumin
1/8 cup olive oil
Method
1. Firstly cut the beetroot and cook in the microve , I cooked on a high for about 6 minutes .
2. Chop shallots finely and saute them in the olive oil ( I had to do this ‘cos hubby dear doesn’t like the smell of steamed onions wafting around)
3. Cook the chickpeas , in a pressure cooker for 2 whistles.Reserve the liquid.
4. In a food processor , take the chickpeas , beetroot , tahini sauce , lemon juice ,garlic, salt and cumin and puree until smooth. Now with the motor running , add the reserved chickpea liquid with the olive oil and process further until smooth . Serve with Pita chips or flat bread.

Oh wow! Thats really pretty! I’m going to try that the next time..I make hummus at least once a week. It would also be cool to make a green spinach hummus and serve them side by side, wouldn’t it?

My kinda girl!! I had collected so many books in B’lore, I left them with my mother. I still miss those after 22yrs!
I have 6 bookshelves full here, 2 of them just cookbooks. I don’t want to move anywhere now, imagine transporting all of those!
