I think it the most famous Indian appetizer in the world. The variations for the stuffing in the pastry are endless , traditionally potatoes and peas, sometimes paneer , spinach , onion or even kheema. I have always associated the samosa with a hot cuppa Irani Chai . I vividly remember going to Blue Sea , one of the most famous Irani cafe ( read Kafe) in hyderabad anytime of the day and being served an oily small onion samosa and enjoyed eating it thoroughly as if there is no tomorrow. Looking back I wonder how could I eat such an oily substance and have a sense of fulfillment and most of all not worry about my weight!
Samosas , were a birthday treat. My amma would take a half day from work, and she and her sisters would get together in my house as I another cousin share our birthdays. They would make samosas by the dozens, each one defining their own shape. Some flat, some too pointy, some not stuffed enough, some didnt even have the shape of a samosa. All in all, we would have a blast because the filling of potatoes would always taste great. Over the years my mother mastered the art of making samosas , but I am yet to master both the art and the patience of making them. We have never made samosas at home as both of us lead quite hectic lifestyles, he with his work and me staying at home ( at the end of the day , I wonder why I am so busy , after quitting my job?). With my thumb cut yet enthusiastic of participating in the Monthly Mingle conceptualized by the lovely Meeta and hosted by dear Mansi , he offered to make them for me. They were a huge success amongst us and also our dear friends S & S who came to our house on a short half hour notice for dinner!
Ingredients:
- For the Pastry:
2 cups All Purpose Flour
Salt to taste
Water and Oil to knead the dough
For the Filling :
1 medium sized Onion
1 cup of peas
3 large Boiled Potatoes
Chili Powder
Cumin Seeds
Amchur Powder ( Optional)
Turmeric Powder , Oil
Salt
- Method :
1.Heat Oil in a skillet and add cumin seeds and let them splutter , Add the finely chopped Onions and saute until pink , add the boiled chopped potatoes and peas along with the chili powder , salt , amchur powder , turmeric powder and cook until done.
For the Pastry here is a pictorial by my beloved ,
1. Firstly take some dough enough for a thick chapati and roll it , Cut into 2 .ie. you will have 2 semi- cirlces
2. Make a cone shape of one semi circle , seal it by wetting your hand and the edges slightly and pull the tip of the cone , making it pointed . The pastry gets dry very fast , so keep wetting your hand and keep using very little water wherever you need to seal .
3.Once done , stuff it with the potato filling or any filling of your choice , make sure you don’t over stuff it or use very little stuffing.Next , slowly fold the ends one over the other like this
5. Finally , deep fry them in medium heat , I use peanut oil for frying because it doesn’t become rancid fast. Serve hot with Imli or Mint chutney.
