Life has become hectic , with friends and family coming to visit us… Last night was the only night , I slept flat 8 hours, My sleep is really precious to me, I try and sneak in 9 hours or more if possible
. I still feel like its a hangover.. tired and getting ready for another visit.. I’m really looking forward to this one ! With all this commotion in an otherwise unremarkable routine , I am really proud that I could do another one for “your recipe rocks” The only change I made was not to add the pistachios. We loved it archana , and we’d love to make it more often. It was a great relief for me to get away from the usual marinara, Alfredo and instead eat beets .
There was some sauce remaining , to which i added some tadka and ginger and lo turned it into a chutney and ate it. we loved it!!! This recipe was intended for kids , but we really enjoyed it. Click here for the original recipe .
Here is the Recipe for it :
1.5 Cups Cooked and Pureed Beets , I had a can of sliced beets , I microwaved and pureed it in 5 minutes flat
1/2 Can Tomato Paste
1 Bell Pepper chopped into 1 inch pieces
4 Cups Cooked Elbow Macaroni (al dente) , I used cheese tortellini
2 Tbsp Flax Seed Powder
1 Tbsp Olive Oil
1 Shallot , I used a small onion
3 Cloves Garlic
1 Green Chili (more if you like spicy) , 4 were to my liking.
Salt and Pepper to taste
Water as needed
Method:
Cook pasta of choice and drain.
In a saute pan, heat up garlic and shallots in the olive oil, till translucent.
Add red bell pepper and saute till tender (~2 minutes).
Add pureed beets, flax seed powder, green chili to the veggies. Stir for couple more minutes and add tomato paste into the mix. Cook on medium low till it starts to bubble a bit (~5 minutes). Add salt and pepper to taste and pour in cooked pasta and mix. Serve warm.

7-9 hrs straight! Lucky soul! I get 6hrs and I am up bang at 5am everyday waiting for others to catch up with me. I don’t think I have ever slept 9 hrs straight in my life! I am hyper!!;p

true dee, this pasta is different from usual marinaras and alfredos..:) looks yumm..and yes, even I manage to sleep 8-9 hrs a day and still have a hangover..;)
