We have a similar pancake recipe in the konk cookbook. But yours looks much easier to make. Will be trying it out. The pics looks awesome!

these look fabulous Dee! and I’ve seen this book too and couldn’t stop reading! jaggery is a nifty replacement to sugar….bananas and cardamom do pair well!
