Watermelon Ice and Watermelon Pie

The only thing that I can visualize with watermelons is juice topped with mint, or watermelon chunks…..I never thought I could do something like this with watermelons……First I made watermelon ice made of water melon juice, and then top off a main course with a simply fabulous watermelon and blue berry pie.

Watermelon Ice:

Cut the watermelon into chunks and just pour into ice cube trays and freeze, these taste good with any juice. I didnt even strain, just poured them into the trays.

    Watermelon Pie

I took the recipe from here and tweaked it a beat to suit our palette.

Ingredients:

1/2 can sweetened condensed milk
1/4 cup lime juice
2 cups watermelon balls
1 cup of blue berries
4 ounce container refrigerated non-dairy whipped topping, thawed
1 9-inch or mini graham cracker crust or frozen pie crust.

Method:

.1. In case of a frozen pie crust, preheat the oven to 400F and pierce the crust with the fork all over and nicely and heat it for about 10 minutes, until it turns golden.

2.Fold together milk and topping. Add lime juice. Fold in watermelon balls and blueberries, reserving a few for a garnish. Pour into graham cracker/ frozen crust. Place remaining watermelon balls on pie to garnish. Chill for 2 or more hours before serving.
