Melon Balls in Honey Ginger Dressing- Our Healthy Breakfast

This is a recipe that I and K make often. Its his way of luring me to eat fruits. The only fruit I enjoy eating is watermelon and sometimes honey dew melon, otherwise fruits are a big no on my list. I know its not healthy , so turned a new leaf and starting incorporating fruits in one meal.

This is a simple and easy to make salad and a change from the usual bread, cornflakes or our Indian breakfasts

This is my entry to paddukotti’s WBB#11 -Summer Fruits

Ingredients :

1 cup of watermelon scoops
1 cup of cantaloupe/papaya/honey dew melon or all

For the dressing :
——————-
2 tablespoons honey
1 teapoon ginger juice
1 tablespoon lemon juice
1/4 teaspoon of crushed pepper
Salt to taste

Cut the melons/fruits into half and scoop balls using a melon baller. pour the dressing and toss gently, otherwise the balls would break.

Refrigerate and serve chill if it lasts that long!
